Sausage and Rice

I'm full of recipes today. This is a family recipe; not because it requires secret ingredients or is fancy by any means. My mom served it to us growing up, and now I serve it to my kids. It's wonderful because it's a complete meal and can literally take 20 minutes to make, if you're quick.

Sausage and Rice

2 c. dry white rice, cooked as directed (start this first, so it will be ready when the dish is finished)
1 package smoked sausage (Hillshire Farms is best, but any will do)
1 can diced tomatoes (do not drain)
1 medium onion, cut into chunks
1 green bell pepper, chunked (red pepper works fine too if you happen to have one)
1 med. zucchini, diced (completely optional, we have tons from our garden so I add to everything)
salt and pepper

Cut sausage into diagonal chunks, about 3/4 in. thick. Saute' in large skillet in a bit of olive oil until starting to slightly brown. Add onions, peppers, and zucchs (if using) and continue to cook til veggies are tender crisp. Add the can of tomatoes, cover and simmer til liquid is bubbly. Add S & P to taste. Serve over rice. I love this with corn on the side to, for some reason.
