Snack Time

I'm constantly scrummaging through my refrigerator for a "snack" for the children that's healthy and scrumptious...sometimes that's a hard task! I am going to create a "snack" category that I'll add to when I'm inspired. Here's the first recipe. Keep in mind, I don't really measure as I'm cooking so these all are estimates...You must taste!











Hummus

1 can chickpeas (or Great Northern Beans, which work just as well if not better), drain and reserve the liquid
1-2 tsp. tahini (sesame seed paste, optional, but a great addition to the texture and health factor)
3-4 cloves of garlic (more or less, depending on you or your kids' love for spice)
1-1 1/2 tsp. cumin
S&P to taste
1-2 T. olive oil
lemon juice (optional)

Put first 5 ingredients in food processor and blend; while processing, pour in olive oil one tablespoon at a time to smoothen and thicken. Depending on the consistency, add some of the reserved bean liquid. The end result should be a creamy, slightly thick dip. Serve with crackers, as a tortilla wrap, or on pita bread. We love this!

Hey Steph, I had to brainstorm and figure out who was Mrs Destroyer! I had no idea you had a blog...You need to update it though! You should try the hummus anyway, I bet Rachel will love it...My girls do!

I think that having snack ideas is great so I put one on my blog too. Seeing as serving snacks to my kids is like a full time job.
